FOOD - HOMEMADE SAMBAL CHICKEN CURRY

I watched a lot of recipes last week to make something new. But I wasn't satisfied with what I got. So I basically combined sambal with chicken and made a curry out of it! Yes, it was an experiment, but a successful one, thank God! Any of my readers, who would like to try it, please go ahead and do let me know how it was.

First, I made the sambal. You will find a lot of sambal recipes on YouTube. I followed the simplest with the ingredients that was available with me. I did not add shrimp paste, as its not available where I live. You can find the recipe I used here.


Here's how my sambal turned out. The brown color came from Jaggery which I had used to mellow the taste of chillis a bit.

I used 500 gm chicken and marinated the chicken overnight in 2 tbsp of sambal. While I was marinating the chicken, I chopped up few potatoes and marinated them with salt and turmeric.

Next, I chopped some garlic, about 5 cloves and fried them nicely in oil until they were crispy and brown.



After that, I added the chicken one by one, from the marination. Please note that I did not add the marination liquid.

I fried the chicken until they were nice and tender. They let out their own oil from the skin, so if you can see, the quantity of oil in the frying pan increased a bit. It is actually a lot tastier if this happens. It means they are cooking in their own fat.

Next I added my lovely potatoes smothered in salt and turmeric. I didn't fry the potatoes separately, but you can fry them in a separate pan and then add it to the chicken. 



I stirred them nicely, then covered the dish for about 5 mins. 

I put about 1 cup water with a little bit more salt in the bowl which had the marinating liquid and added it to the chicken and potatoes. I then covered it again and simmered for about 30 min so that all the flavours mingled and partied among st themselves. I did check in between so see if the water didn't dry up. If yours do, please feel free to add some more water. 



When, it was done, it looked like this.


My recipe didn't have a lot of water in it. I liked it dry, because I felt the sambal flavour would come out really well and guess what? It did! I loved it. I ate it with Roti and a huge bowl of salad.


Sorry guys! I didn't take a picture of the curry, firstly because it was very delicious and I wasn't thinking straight at the time of unimaginable hunger! Secondly, I didn't realize I would be including this recipe in my blog. Otherwise I would have taken better pictures. 

It's only after eating I realized why not give it a shot and share it with you all.
